These healthy and nutritious Bliss Balls are packed with superfood ingredients to brighten your day. If you have a honey allergy, the bee pollen can be left out or substituted with desiccated coconut. They can be stored in an air tight container in the fridge for up to 2 weeks - that's providing you can keep them there for that long!
Ingredients
60g sunflower seeds
70g pumpkin seeds
40g white chia seeds
65g pecan nuts
30g hemp seeds
2½ tablespoons bee pollen
1 tablespoon ground cinnamon
1 teaspoon maca powder
¼ teaspoon ground ginger
10 chopped and pitted dates
A pinch of Celtic sea salt
70g dried figs
1 teaspoon vanilla extract
11/4 cup of raw honey or rice malt syrup
Black and white chia seeds or desiccated coconut to roll the balls in
Method
Place the sunflower seeds, pepitas, and chia seeds in your food processor and pulse them together until a fine crumb forms. Add the pecans and pulse just a few times or until they are broken up but still have plenty of texture.Transfer the mixture to a bowl and add the hemp seeds, bee pollen, cinnamon, maca powder, celtic sea salt and ginger.
In the clean food processor place the dates, figs, vanilla, and honey, then process until everything is smooth. Add the date mixture to the bowl with the dry ingredients and mix them together well. Add a tablespoon of water if the mixture seems too dry. Tip: use food handling gloves and get in there to give everything a good mix.
Take about a tablespoon of the mixture at a time and roll it into 1-inch balls. Roll the balls in the black and white chia seeds, then place them in an airtight container and refrigerate them. These will keep for up to 2 weeks in the fridge
